Who We Are

Recognizing that the enjoyment of wholesome food is essential to the pursuit of happiness, Slow Food U.S.A. is an educational organization dedicated to stewardship of the land and ecologically sound food production; to the revival of the kitchen and the table as centers of pleasure, culture, and community; to the invigoration and proliferation of regional, seasonal culinary traditions; and to living a slower and more harmonious rhythm of life.

Slow Food Buffalo, the local Convivium (chapter) of the movement, is an active part of the Western New York community. We host events to raise awareness of local food producers and their products, hold educational tastings, and support local groups that share similar goals. Our mission is to have fun sharing the things we love about our home while ensuring their continued existence.

Binational Culinary Talents at Binational Tourism Summit April 3, 2008


The 2008 Binational Tourism Summit opens Thursday, April 3, 2008 at 5:30 p.m. at the Adam’s Mark Hotel, Buffalo, NY with the Binational Cornucopia Food & Wine Event, a showcase of diversity of wine and culinary talents in the cross-border Niagara region.

This event, co-hosted by the Canadian Consulate Buffalo and U.S. Consulate Toronto, begins at 5:30 p.m. Formal proceedings begin at 6:15 p.m. with greetings from U.S. and Canadian Political leaders, and presentation of the 2007 Binational Star Awards to NYS Senator Mary Lou Rath, Entercom Buffalo, Shaw Festival and Tony & Connie Zappitelli.

This is the second year that culinary partners from Buffalo State College, Niagara College and Chautauqua County, are collaborating in this demonstration of Niagara’s regional cuisine offerings, and the first time they will be joined by wineries from both Niagara Region, Ontario and Chautauqua County, NY.

Participants include chefs and students from Buffalo State College Campus House, the Niagara Culinary Institute in Niagara-on-the-Lake, Peek n’ Peak Resort and Spa, Chautauqua Institution, the Athenaeum Hotel, Webb’s Candies & Resort, Inniskillin Wines, Jackson-Triggs Niagara Estate Winery, Chateau des Charmes, Mazza Chautauqua Cellars, Merrit Estate Winery and Johnson Estate Winery.

The Tasting Menu includes:
Medallions of Veal with Peach Chutney
Grilled Duck Breast with Vegetable Salsa
Ice Wine Glazed Quail on Mixed Greens with a Citrus Dressing
Strozzapreti Pasta with Wild Mushrooms, Cream and Truffle Oil
Creole Shrimp Jambalaya in Pastry Shell with Blackened Shrimp on Top
Seared Rack of Lamb, Sesame Crusted with Goat Cheese, Radish, Yellow
Pepper & Shallots
White Bean Soup with Cured Ham and Extra Virgin Olive Oil
Pan Roasted Pork Tenderloin with Wild Mushroom Risotto & Braised Kale
Homemade Goat Milk Fudge and Cheesecake for Dessert
Red, White & Specialty Wines

Guests will also be treated to a binational Arts & Cultural Showcase, assembled by the Event Management students at Buffalo State College, along with an evening of music by the Mark Mazur Band. The evening will wrap up at 10:00 p.m. in preparation for the full day conference April 4 at Adam’s Mark.

Tickets are $55 for BTA members and $65 for non-members. A limited number of tickets are still available.
